I'd like to know what are acceptable ranges for SNR and RSSI. I plan to install a couple of devices at customer premises, and would like to understand beforehand if I can go for Sigfox or stick to a wired solution.

Regarding SNR, I'd recommend not using it as reference. There have been lengthy internal discussions about its relevancy, given the way it is computed
RSSI way more informative.
Sensitivity on the base stations gets as low as -142dBm.
Something else to consider : how many base stations are usually receiving the messages ?
Having more than one can make you more confortable
